Take a fresh organic chicken breast and cook it in olive oil (or butter if you prefer). Sprinkle some seasoning salt or pink salt on it (I prefer Lawry’s). In a separate skillet, sauté some fresh organic baby spinach in butter (and garlic cloves-optional) with some fresh mushrooms. Find a good homemade keto friendly white Queso recipe. The one I use requires only white American cheese (but you could use other cheeses of preference), halt & half, and salsa verde. Look around for a more keto friendly recipe if you choose. Take the spinach and mushrooms and put on top of chicken then cover it with the Queso. You could also add some grilled onions and/or sautéed shrimp if you don’t mind eating the roaches of the sea. I like them but they are a nasty creature. This dish is amazing and according to my calculations is keto friendly. I hope you enjoy and let me know if you have any other ideas for this dish!
