Delicious keto southern baked chicken

Here’s a delicious recipe I use. The whole family love it :

180g Almond meal
3 tspns hot smoked paprika
1 and a half tspns cumin
1 and a half tspns salt
1 tspn thyme
1 tspn oregano
3 quarter tspn onion powder
3 quarter tspn garlic powder
mix dry ingredients together
1 egg beaten

i use chicken wings, but any chicken will do.

dip chicken in egg and coat in the almond meal mixture
place on a baking tray lined with baking paper to prevent sticking
bake for roughly 40 mins at 185 C turn chicken halfway

if like me, you have a vegan in the family coat mushrooms and veggies, or do it anyway. hope you like this recipe.

done. It has to be baked though if its fried the crumbs fall off

yes I’ve also made it with the quorn fillets and mushrooms are delicious

Yeah, it’s interesting how [egg + bread crumbs] manage to get fried without falling off, while [egg + almond flour] doesn’t fare as well. At least that’s been my typical experience thus far. I would’ve thought the egg-based batter would do the trick. Perhaps we need some other ingredient in the mix?

You can fry with egg + cheese (parmesan), or egg + pork rind (+ cheese or other stuff). I wonder what happens with almond flour?

I made some scotch eggs the other day with just almond flour instead of egg & breadcrumbs, that worked fine fried as the almond flour stuck into the sausage meat (veggie for me!) Definitely recommend those!
