Dean's mini cheesecakes

Granola

2 cups slivered almonds
2 cups sunflower seeds
2 cups flaked coconut
2 cups pepitas
1 tsp nutmeg
1 tsp cinnamon
1/3 cup coconut oil
1 tblsp honey

Mix, and bake at 160°C for 20 mins. Turning regularly

Once cool, mill in thermo until a crumble.

Place in bottom of muffin trays - press down firmly.

Raspberry Cheesecake (fat bombs)

100g raspberry (or strawberry or other fruits)
Blitz in Thermy for 5 sec in speed 5
Set aside.

300g cream cheese chopped
120g unsalted butter chopped
Mix in thermy for 2 mins at 40°C speed 4

1 tsp of vanilla essence
Add fruit and mix on speed 4 until a mouse like consistency.

Scoop out and lay on top of crushed granola.

Add unmilled granola on top and freeze for a couple of hours.

Eat when you want!

personally i’d skip the honey but it’s not a lot.

who says keto is boring.

1 tbsp is the entire granola mix of which you use a minimal amount. Seemed ok to me. But sure.
