Curry

What I love about eating keto is that it can be so diverse. I made myself keto curry tonight and it was so good. I am not so much into precision - no exact measurements - its more by taste. You can have fun with it and make it as spicy hot or mild as you like.
So:
fry some chopped onions in coconut oil. Add any kind of meat you feel like. Shrimp could work too. I used chicken breast cut in chunks. After this has browned a bit, add veggies. I just open a bag of frozen veg- like broccoli and the rice cauliflower and fresh red bell peppers taste really good. I used to use carrots but no more. Stir fry this a bit with salt and pepper. Then add unsweetened coconut milk to submerge the ingredients, and either 1 or 2 tablespoons of red curry paste, depending on how much heat you can take.Let simmer until all the ingredients blend. And voila- you got curry! No rice though, but I did not miss it because of all the veg.

Thanks! My recipe is more for the lazy. You just throw the stuff together. But I LOVE indian food. I would think chicken Tandoori is keto too! No rice, though. I never missed it.

I change my microwave single bowl “dump soups” into curries by just adding some unsweetened coconut milk, various curry powders, and some cream cheese.
