Crustless Quiche

Stripped-down version of a recipe I found online:

10-inch pie plate.

4 medium eggs
1.5 cups half-and-half
Meat pieces
Diced or shredded cheese
LC veggies of choice, sautéed if desired to soften or reduce moisture comtemt

Pre-heat oven to 350°F. Mix together eggs and half-and-half. Layer or mix meat, cheese, and veggies in the pie plate. (If you use a glass plate, there is really no need to pre-grease it). Use a good amount of filling, you want this to be YUM!

Place the pie plate on a baking sheet in the oven. Pour over the egg mixture until pie plate is COMPLETELY full. Slide into oven and bake 50-60 minutes or until just set in the middle.

I used deli ham, cubed brie cheese, and sautéed canned mushrooms and leeks. Delicious!

Crustless Quiche FTW! I made 3 yesterday – can get a week’s worth in one shot. Super-efficient.

I’m doing this recipe but they’re all about the same-
