CRUNCHY cookies/biscuits?

Crunchy, not soft, not chewy, cookies/biscuits? Is there such a thing?

Slowly transitioning and would like to keep some in the house for kids and when I need a biscuit treat but most are soft and, as my husband complains, “stick in my throat!”

I love Daisy’s lemon poppyseed ones but they are soft.

I Googled “crunchy keto cookies” and got a bunch of hits for different flavors; then I did the same for biscotti, which would work if you are looking for something to go with coffee/tea specifically. There is a LOT out there.

I made these for the first time yesterday and really like them. They’re simple, but crunchy if you keep the in the fridge.

That’s funny, I just made the dough for a new batch as well!

I suspect that they would be crunchier if you slice the dough a little thinner than the recipe suggests, but you’d have to cut the baking time slightly as well.

Waiting for them to cool isn’t easy!

I read that they’re crispier the second day (although I don’t mind soft cookies either). And yes, I do have an avocado green stove.

I didn’t get a chance to make these and finished off the softer ones I had already baked. They look great! Let me know if they are crisper from the fridge or the next day. :+1::blush:
