Crepes with nut flour and sour cream

My breakfast:

  • 4 eggs
  • 1/2 teaspoon baking powder
  • 1/4 cup hazelnut flour (or other nut based flour)
  • 1/4 cup sour cream
    Mix together for smooth batter.

Fold in 1/4 cup sliced blackberries (optional)

Make as a crepe/pancake and then add dob of butter.

Yes, excellent flavor and the benefit of increased fat from the nut flour.

BTW how are you doing after your long fast in December? Have you done more fasting since?

I’m doing fantastic, now doing a three day fast once a week and maintaining my weight and health benefits gained from the 21day fast.

I am glad to hear it - I remember I was following your fasting posts. I am trying to supercharge the last 1/3 of my weight loss by doing a 2 or 3 day fast every week. We’ll see how it goes. Thanks!

Thanks - I made them (a day late) and they weren’t bad… a little eggy if left as per recipe - I had those ones as savory with fried chicken. They wouldn’t hold together for flipping if you try to make a real thin French crepe but 6 inch pancakes worked pretty well.

Add some sweetener if you want sweet crepes and reduce the eggi-ness.
