I just threw this together and it was SO satisfying that I had to share. Shrimp cooked (15 small) in a tablespoon of Kerrygold. Added 1 oz cream cheese, about 4-6 tablespoon heavy cream, about 5 tablespoons parmesan cheese all cooked down (I didn’t measure exactly - sorry). Then I added 1 1/2 cups fresh spinach and let it saute down. Added sea salt, pepper, a dash of TS spinach herb seasoning and red pepper flakes for heat (key!). Let it cook down to thicken.
