This morning I whipped up this quick and yummy dish in my frypan. I wanted some veggies with bacon as I was not in the mood for eggs and then I added cream to the dish. Yummy.
So, pan fry some bacon in butter. Add chopped broccoli and stir for a minute. After about 3 more minutes add a dash of water or other liquid to create some steam and put the lid on the fry pan.
If you don’t have a lid then just keep frying and stirring adding little bits of water as you go so most of it turns to steam rather than sitting at the bottom of the pan.
Add a chopped spring onion and some mushrooms. If you only have bulb onion add this earlier with the bacon. Continue cooking. When the vegetable look about done add about 3 tablespoons of cream and more liquid if it is not runny enough. Add more cream if you want.
I found the flavour of the bacon infused the cream and this then infused with the other ingredients. This reminded me of a bacon and cream pasta but with veggies.
Feel free to change the veggies or add cheese at the end either on top of the dish or stirred through at the end of cooking.
