This is from Serious Eats. Other than the peas, which are added at the end and don’t need to be added, this looks pretty good for those not sticking to a strict 20g/day:
It does use a whole onion for 4 people, but if you’re concerned, you could probably scrape that away. It also uses white wine.
I love salting meat the day before, as I think it benefits the meat.
And adding an egg to the top sounds like a great idea.
