Since it’s just me, I got some thin-sliced from the deli, and I’m gonna make a Reuben, but I have to get busy making some mayo so I can do the dressing for it! I’m way ahead on the homemade sauerkraut. :grin:

I like it simmered slowly in lots of water… Then, bring another pot of fresh water up to the simmer and move the corned beef into that for another round. It really tames it - especially the cheaper ones. I love it that way.

Earlier in the week I purchased two of them. One down, one to go. :cow:

Got a corned beef from Sam’s club. Going to throw it in the crockpot to cook slow with some cabbage. Should be super yummy!

Bought mine at Sams Club as well

  1. cooking it simple the same
    Topped w some ( I mean lots ) butter and mustard on the side

  2. Then w eggs tomorrow some time
    W some cauliflower hash brows below🤔

I covered mine with foil after adding about a cup of water to the roasting pan and baked at 350F/3hrs for Reuben sandwiches. It was awesome! Having left overs tonight too. :blush:
