Cold sesame zoodles (similar to Chinese takeout sesame noodles)
Tonight’s excitement was to try to recreate cold sesame noodles that are sort of ubiquitous on Chinese takeout menus in my part of the world.
2 zucchinis made into zoodles
3 T. Dark Sesame Oil
2 T. MCT oil
3 cloves Garlic
3 T. Soy Sauce
2 T. Hot Water
3 T. Vinegar, distilled
1 Tsp (4 g), Ginger Paste
1 tsp (5 g) sambal olek
2 T. swerve
1.32 oz/ 37.50 g, Peanut Butter powder (The peanut butter powder has less carbs than peanut butter–go figure…)
0.20 oz/5.6 grams sesame seeds
15 gr./0.5 ounces Green Onion, sliced
1/4 c. (15 g) Coriander (cilantro) leaves, chopped
28 g/1 oz. Roasted and Salted Peanuts
Zoodle the zucchinis with your favorite zoodler. Once you have the zoodles ready, place them in a large bowl. In a smaller bowl, whisk the oils, garlic, soy, ginger, vinegar, sambal olek, swerve, and peanut butter powder together to make a smooth mixture. Add one tablespoon of water at a time and whisk in to the mixture. Only add enough water so that it is still thick but pourable over the zoodles. Mix the zoodles and the liquid mixture together. Serve garnished with sesame seeds, green onions, coriander/cilantro leaves, and chopped peanuts.
If you need protein for the day, some leftover cold diced chicken or shrimp would go nicely with this one.
