Coffee Chia Pudding :

Serves 1 (or if you prefer, divide into 2 smaller jars)

Ingredients:
3T Chia seeds (2T will mean you get more a liquid texture, where as 3T makes it solid)
1T Flaxmeal (optional, I put it in for the fiber and Omega 3)
A pinch of cinnamon powder
1T cacao powder (if you want the chocolate flavour) 60ml heavy cream
1C coffee
1T of raw cacao nib and pinch of dedicated coconut for garnish.

Method:

  1. I make my Ice coffee the night before - I find the easiest way to do it is to put about 5 heaped tablespoon of ground coffee in a 4 cup plunger, pour hot water over the coffee and let it sit at room temperature over night. This means I can have ice coffee the next day too!
    Tip - pour a glass of ice coffee into a thick water glass, pop it in the freezer for 30min and the use a fork to break up the ice, repeat every 15min or so, then you’ll have coffee granita, perfect for hot weather

  2. Mix all ingredients together in the glass, put in the fridge for approx 3 to 4 hours or till set. Garnish with cacao nibs and a bit of coconut and Voila!
