Cloud Bread and storage question

(cheryl) #1

So have made this a few times. Good… however, I have been putting them in bags after cooking – and they tend to get a little soggy…

How do you store them? Do you let them dry out a bit before storage? Do you freeze?

Advice welcome!

I let them cool completely. Then I store them in a Tupperware in the refrigerator. But they have to be completely cool, or they steam

I put them in a container and put them in the fridge without a lid. I always make a batch of six buns. They dry out a bit which is ok. Makes them easier to toast! I usually use them up within a week or so anyway.

I let them cool completely and then freeze them with squares of parchment in between. Then it’s easy to pop frozen ones in my lunch container (metal bento) and they are thawed and perfect by lunch time.

so letting them cool completely will help them not be soggy!? Love the idea of parchment paper in between.

Yes, I leave them on a wire rack until they are completely cooled. Then they go right in the freezer unless I’m planning to have them by the next day. I refrigerate those.

I let mine cool off completely on the rack. And then I let the dry for a couple of hours, before I put them in a tupperware box or a zip lock bag and store them in the fridge. Then they don’t get sticky in the fridge. The drying is the essential part. And I think they taste better after drying.
