1 cup Swerve confectioners sugar
1 cup of peanut butter
1 egg
2 T cocoa
2 t vanilla extract
pinch of sea salt
Put in a bowl. Mix well. Batter will be stiff as play-doh. I got 24 cookies out of the batch. Roll into balls, press flat. Use fork to make an indent. (I tried to criss-cross but it got a bit sticky.) Bake for 12 minutes on 350 degrees. Take out of the oven and DO NOT TOUCH for 15 minutes.
I forgot… The whole batch had 34 carbs. That makes each cookie 1.42 carbs so I’m rounding up to 1.5. (My peanut butter was 4 net carbs per serving.)
