1 stick of butter
1 1/2 T cocoa powder
1/4 cup peanut butter
1/2 cup heavy whipping cream (replaces milk)
Substitute sweetener (replaces 2 cups of sugar)
1 t vanilla extract
2 to 3 cups of unsweetened coconut (replaces oats)
Combine all ingredients except vanilla and coconut in a large nonstick sauce pan and boil for 90 seconds. Remove from heat and add vanilla and coconut. Mix well and spoon out cookies onto a piece of wax or parchment paper. Let cool for at lest one hour to set up. If it is a rainy or humid day these will not set up. In the three months that I have been strictly Leto my taste for sweets has changed. My cookies are almost too sweet for me. The original recipe calls for 2 cups of sugar and the substitute sweetener that I have is twice as sweet as sugar so I used 1 cup. Next time I will use much less or maybe even none at all. I would suggest tasting the mixture in the pot before adding your sweetener.
