Chocolate no bake cookies SUGAR FREE!

1 stick of butter
1 1/2 T cocoa powder
1/4 cup peanut butter
1/2 cup heavy whipping cream (replaces milk)
Substitute sweetener (replaces 2 cups of sugar)
1 t vanilla extract
2 to 3 cups of unsweetened coconut (replaces oats)

Combine all ingredients except vanilla and coconut in a large nonstick sauce pan and boil for 90 seconds. Remove from heat and add vanilla and coconut. Mix well and spoon out cookies onto a piece of wax or parchment paper. Let cool for at lest one hour to set up. If it is a rainy or humid day these will not set up. In the three months that I have been strictly Leto my taste for sweets has changed. My cookies are almost too sweet for me. The original recipe calls for 2 cups of sugar and the substitute sweetener that I have is twice as sweet as sugar so I used 1 cup. Next time I will use much less or maybe even none at all. I would suggest tasting the mixture in the pot before adding your sweetener.

I’ll try them this weekend with cinnamon and some chopped nuts added.

These sound delicious! My kids have been begging for cookies but we’ve basically gotten rid of all carby stuff in the house.
