Ok, so I’ll be 50 on Saturday and the party is Sunday evening, so I’m looking for a chocolate cake recipe. I’ve tried this one that uses zucchini (https://lowcarbyum.com/best-low-carb-chocolate-cake-recipe/). I thought it was ok. Not great, but ok. At least part of that I chalk up to being one of those people who is really picky about cake, as cake is not my favorite dessert, but if it is really awesome, and moist, and rich, then I’ll love it. Anyway, this zucchini one was “ok” in my book.
I’ve made the Whoopie pies a few times (http://blog.2keto.com/recipe/old-fashioned-whoopie-pies/), and I LOVE how rich and moist they are. The only thing I’ve done differently from the recipe is that I’ve added a bit of xanthan gum to give them a little more structure, so they don’t fall apart. If I do this, I’ll make a simple chocolate buttercream frosting (cream cheese, butter, xylitol, cocoa, guar gum, and vanilla), rather than the plain vanilla whipped cream this time around.
I’m thinking about scaling that recipe up and putting it into a cake pan, but thought I’d throw it out there to see if anyone has a really awesome recipe that is rich and moist, and would satisfy even the pickiest of cake eaters.
