Chile Relleno Casserole

This is delicious! I used the low carb chile relleno recipe from Food.com (link below). I quadrupled the recipe (lots of mouths to feed) but cut down on the heavy cream a bit. Because I was quadrupling I would have needed 3 cups of hwc and I only used about 2 1/4. I also waited until the last few minutes to add the cheese on top.

This is how the macros broke down for me with the ingredients I used (net carbs).

I’m going to make a carnivore version of this, and try it with the chilies after ZC March. Yum!

Thanks for this recipe, I love chili rellenos. I think I’ll add some diced tomatoes and onions, though.

Bacon would probably be good too. :grin:

I have some carnitas in the freezer I’ll probably have with if tomorrow.
