This is delicious! I used the low carb chile relleno recipe from Food.com (link below). I quadrupled the recipe (lots of mouths to feed) but cut down on the heavy cream a bit. Because I was quadrupling I would have needed 3 cups of hwc and I only used about 2 1/4. I also waited until the last few minutes to add the cheese on top.
