Chicken Philly Cheese Meatloaf

A delicious meatloaf flavor alternative.


4 tablespoons oil
2 pablano peppers, thinly sliced
1 small white onion, thinly sliced
5 ounces mushrooms, chopped
4 cloves garlic, minced
1 tsp sea salt
1 tsp black pepper
1 1/2 pounds ground chicken
2 eggs
2 tablespoons Worcestershire sauce
8 oz provolone cheese (6-8 slices)

Preheat oven to 350°F
Heat the oil in a large sauté pan over medium heat. Add the peppers and onions, and sauté until the vegetables are almost tender
Add mushrooms, garlic, salt and pepper to the pan, and sauté until vegetables are tender
Finely chop 1/2 the pepper mix.
In a large mixing bowl, combine the ground chicken, eggs, worcestershire sauce, and finely chopped pepper mixture. Mix until all of the ingredients are well incorporated.
Pour meat mixture into a loaf pan
Bake for 30 minutes
Top the meatloaf with the cheese and the remaining pepper mixture. Bake for 10 additional minutes.
