Chia seeds!

I know I am late to the game on this, but I just bought a big bag from Costco. If you told me 14 months ago I could make a pudding with chia seeds and coconut milk and think of it as a dessert, I’d think you were crazy. But that’s the power of a changing palate after giving up sugar. I added some mashed up a about 70 grams of lower sugar frozen fruit and it was amazing! Definitely not low calorie but
6 oz of coconut milk
2 tablespoons of chia seeds
mix together, refrigerate for three hours of more
add
70 grams of frozen berries and about 10 grams of chopped almonds

Feels like a company worthy dessert pudding… as long your company is doing keto too!

Anyway, since I have a giant bag, anyone else got some recommendations on what do add them to? I was thinking they could be a thickening agent. Would it be weird to try and make ‘gravy’ with them?

Gravy might be weird! But you could try making chia jam? Heat some raspberries, a little lemon juice and chia seeds to thicken. AussieKetoQueen has a recipe for scones! A dollop of clotted cream and you will be buying another big bag of em!
I soak them in a mix of cream and almond milk with vanilla. I use a little stevia (optional)
Good for constipation too!

I made a parfait using this jam recipe once, but used blueberries instead of raspberries -

Chia seeds, coconut milk, teaspoon of raw cocoa powder and a few cocoa nibs. Leave to thicken. Very tasty.
