Cherry coconut cookie dough truffles by Zorn

Vanilla extract
Almond extract
Cherry extract
Melted butter
Almond flour
Salt
2 raw eggs (I like to live dangerously)
Truvia, or a granulated erythritol/stevia blend
Unsweetened coconut
Coconut oil
Unsweetened chocolate
Recipe? There isn’t one. I made it up.
Method:
Mix almond flour, Truvia, melted butter, eggs and a large pinch of salt. Stir. Mix in extracts and coconut. Should resemble cookie dough. Shape into balls. Freeze.
Melt unsweetened chocolate with Truvia, coconut oil, and almond extract. Coat or drizzle this over the frozen truffle balls.


These are beyond good. You can make them too. You’ll have to wing it, I didn’t measure.

A few questions:
1.unsweetened coconut, do you mean like desiccated coconut?
2. Any option if i didn’t want to use raw eggs?
3. Are they suitable for freezing? Considering they contain raw eggs?

Not brenda but…

  1. unsweetened shredded coconut is generally what its labeled as
  2. I would say look up how to temper eggs which kills potential bacteria without cooking the egg
  3. uncooked/tempered egg freezes beautifully - it is a great way to save leftover egg white or yolk from recipes that only use one

I got some 100% dark chocolate while in the US. Was nice for a taste but can’t eat much of it due to how bitter it is (which is a good thing I guess.)
Can’t get that high percentage here in Australia it seems. Highest we’ve found is 70%. Unsweetened chocolate also doesn’t seem to exist. All chocolate seems to be bastardised with sugar in Australia. Disappointing.

They look nice but I do wonder about people on LCHF woe trying to make “sweet” foods. Having foods as a treat (for me anyway) puts them into the “we shouldn’t be having these” basket.
That said, am going to have a go at making these. :slight_smile:

@Stephen Lindt have a 99%, I’m not sure if it is available in supermarkets I got mine at the Lindt shop in Canberra. I know you can get up to 85% in the supermarkets.
