Cheez-it Recipe, Keto Cracker

1/2 cup almond flour
3/4 cup shredded extra sharp cheddar
3/4 cup shredded mozzarella
1 oz cream cheese
1 large egg, beaten
1/4 tsp salt

  1. Whisk 1 large egg, add almond flour and salt.

  2. microwave cheddar, mozzarella, and cream cheese until melted or use a bain marie until melted.

  3. Add melted cheeses to other mixed ingredients and fold until fully incorporated.

  4. Using two pieces of parchment paper press the dough until quite thin. Remove and discard the top piece of parchment paper. Carefully slide the rolled dough and parchment onto the sheet tray.

  5. Score them into squares using a dull knife. Bake crackers at 400F for 7 minutes.

  6. Remove crackers from oven and allow to cool slightly. Flip all crackers over.

  7. Cool, then break apart the crackers. Enjoy!
