Cheesy Breadsticks- Keto-fied

Here are some cheesy bread sticks I just made. I used this recipe for inspiration (with some tweaking): https://www.nickoskitchen.net/blog/keto-bread-sticks

INGREDIENTS
1 large egg
1/2 cup ricotta cheese (or cream cheese- ricotta makes the bread fluffier; I used a half cup of cottage cheese, blended with a stick blender)

3/4 cup (84 grams) fine almond flour
1 TBS psyllium husk powder
1 tsp baking powder
1/4 tsp baking soda
1 tsp Italian seasoning (optional)
1/2 tsp garlic powder (optional)

4 to 6 oz mozzarella cheese, shredded

METHODS
Preheat oven to 350F.

Add the egg and ricotta cheese into a bowl and mix well to combine.

Next, sift the almond flour, baking powder, baking soda, psyllium husk powder, and garlic powder together. Once these are sifted, stir in the Italian seasoning.

Add the dry ingredients to the egg and ricotta mixture. Mix well. This makes for a very wet dough, let it sit for 5 to 10 minutes for the psyllium husk powder to hydrate and the dough to firm up a little.

Spread the dough out on a parchment paper lined baking sheet (you may need to sandwich the dough between two sheets of parchment paper) and press out until it’s 1/4 to 1/2 inch thick.

Bake for 20 to 25 minutes until the edges begin to brown and the center is fairly firm to touch.

Sprinkle the bread with more garlic powder, if desired.

Cover the bread with the grated mozzarella cheese and a sprinkle of dried Italian herbs.

Place the bread back into the oven for another 5-10 minutes or until golden brown and the cheese is bubbling. You can turn on the broiler for the last couple of minutes to make sure the cheese starts to get browned and bubbly.

Take out of the oven, slice thickly and serve immediately.

You might serve this with a fresh tomato sauce, blue cheese dressing or garlic ranch dressing for dipping.

This original recipe developer states that these can easily be switched up to a sweet recipe by keeping the base ingredients but adding a sugar substitute and cinnamon.
