Cauliflower rice plus TIP

cauliflower

How do people get the riced cauliflower for the various recipes here? Does anyone have a source where they can buy it frozen, already riced?

YouTube is full of instructions that involve cooking raw cauliflower, ricing in a food processor, then getting the excess water out by wrapping the hot cauliflower in a towel and squeezing. Too much work! Ain’t gonna happen at my house!

Here’s the tip. Unfortunately it requires a piece of kitchen equipment you may not have. But here goes… feed chunks of raw cauliflower into a JUICER. Throw the juice away. The “pulp” bin will be full of perfectly riced cauliflower, ready for whatever you like to do with it.

I just bought some yesterday at Trader Joe’s and I’ve also bought it at Costco before in the refrigerated area. I’m not sure about frozen.

Easy to make in a food processer. Just cut the florets up toss them in with a couple of cups of water. Pulse it a few times, pour into a strainer, squeeze the excess water out …done. Takes a few minutes.

I put raw cauliflower into my blender with plenty of water, buzz it till it looks right, then drain it through a sieve. After that it’s ready to be cooked. There is usually enough water still left in it so there is no need to add more. The cooking process steams out any excess moisture.

Now it’s ready to be used in recipes calling for cooked cauliflower rice.

Great idea for the use of a juicer!

That’s how I do it. I tried a food processor but had an issue with water out of the top. So I’ve been using a blender and it does well. I measure out 170g batches into ziplocks, flatten them and freeze them. Pop them into a bowl when I need them and nuke for 5 minutes. I’ll put some in a mason jar for the next few days to reduce the bag use.
