Casein Powder Pancakes

Made these today based on https://www.reddit.com/r/Fitness/comments/1397m6/very_lowcarb_casein_pancakes_a_tutorial_in/

My recipe is much simpler:

  • 2 Scoops Casein Protein Powder
  • 4 eggs

Mix until smooth and creamy with a fork. Cook like griddle cakes in coconut oil. Smush well when flipping.

I used Chocolate powder because that’s all I had. They rose nicely, and were bready. Seven-year-old gave them thumbs up with peanut butter on them. He was full after two.

These seem like they would batch up well to freeze a-la Eggos, or even use as bread.

Will try again tomorrow with plain Casein powder, vanilla and cinammon.

Where are you finding casein powder? I’d love to experiment with it.

Thanks! I’m sure casein looks promising because it’s been used before. I have this book and it calls for Casoid flour which I’m assuming is what we are calling casein modern day. Download it, it’s very interesting considering it’s 100yrs old.

@JustPeachy wow, that’s fascinating! It does seem to behave like flour in the pancakes. Also it’s very filling and moves slowly through the system.
My kid and I have discovered that combining the powder with milk makes a super-easy “pudding”. Refrigerate it overnight for a more fudgy texture. Add salted peanuts for texture and crunch, or some Lily’s chocolate chips.
I’m no baker, so love super-simple, high ROI recipes that are easy to remember.
