Carnivores March into March :)

Parmesan pork nuggets, sirloin steak bites and a cup of yogurt. With the yogurt I did have one more steak bite that I cut up for my niece but she didn’t eat. I’ve been looking forward to this yogurt for 2 weeks. I don’t dislike the nonfat Greek yogurt, but it’s definitely no match for this. So I wanted to use those and save the best for last.

#163

What. I thought Greek yogurt is the 10% fat one. I don’t think I ever saw a different one here… I will look tomorrow, I am curious what kind of yogurts are here. As I basically never eat that stuff, never looked.

(Daisy) #164

There are tons of Greek yogurt. The nonfat I was eating was also Greek yogurt. I can get nonfat, 2%, 5%, that’s all I’ve ever seen. I’ll have to look for that Cabot creek one, I’ve never noticed it.

We’re the same here in Texas! Our water here is only rain water collection tanks so when we go 5 months without rain as we have now, we start to worry. Sorry you are experiencing the same.

Wow I used to love yogurt and kefir and sour cream and butter! Maybe covid and its taste sensitivity was preparing me for all the changes this year.
After I started carnivore in January, both fridges started smelling bad, like somebody died in there :joy: we cleaned the kitchen fridge and the smell was gone. All the veggies hubby doesn’t eat went in the garbage. So yesterday I cleaned the pantry fridge and guess what I learned? That horrific smell was GARLIC! something I used to love so much I could practically chew it raw, and now it’s like, sickening!
Hubby brought home some fried mozzarella a couple weeks ago and I put it in the air fryer to warm it, then I said ew! Why does the house smell like old people?? And guess what, it was garlic! I’m really happy to have gotten rid of all those veggies. He just eats mostly broccoli and potatoes, and not much of those, so the fridge stays fairly empty these days.
Today’s day 59, I’m feeling a teeny bit of adaptation starting. Someone on another thread here said it takes about 6 months, so I’m still 4 months away maybe. But my guts are way better.

Lastnight, deer sausage and deer jerky from a neighbor who comes over to play music. I’ll see if I took a pic, not sure. Also some grass fed kerrygold aged cheddar that was a good pairing with the deer meat.

This morning before going shopping I was pretty hungry so I had 2 eggs and 2 small hamburger patties about 9:30. Later, at the brewery, mineral water and chicken wings.
We discussed whether I should ask them to leave off the veggies but then we both agreed they’re pretty and add color, so I let them be there while I ate. I brought the carrots home to cook and add to the dog food as there has to be a few veggies in it and this way I don’t have to buy her carrots!

Tonight I had turkey deli meat and more cheddar. I am trying to keep night time fat lower, to get a better night’s sleep, instead of running to the bathroom every hour!

There’s a beef heart in sous vide right now, should be sweet and tender when we get home from the gig tomorrow about 7. Hubby says he will refuse to partake - guess I’ll be fixing him something else, lol

Ok, long post incoming - about the merits of steak vs ground (minced) beef.

For background, I ate steak and eggs only - for every meal - for around 10/11 months. I tried different butchers but despite requests, they kept sending steaks with a slither of fat. This made me feel strung out, and I hated trying to add fat from other sources (like ghee).

I spent about 8 weeks eating primarily pork. At first I loved the crackling, but I found I soon tired of the meat.

I had a bit of lamb - and then I hit on ground beef. I’ve been eating this for 3-4 months. The butcher I use now seems very good quality - his other produce is very good and consistent. It tastes good, it cooks up well, it smells good.

The fat ratio is 80/20, which has felt perfect. It’s packaged in 1kg blocks, so I cook 1kg at a time, eat 500g with half of the liquid fat, and then 500g with the rest of the fat for a second meal. I don’t add anything other than salt.

I am very strict with my food - I don’t cheat. Weirdly enough, having done carnivore for about 18 months, I don’t see non-meat as food anymore, so the desire to eat it just isn’t there. So the only other things I eat are, maybe one meal every 2-3 weeks, I’ll eat lamb, salmon or chicken for a bit of variety. 95% of what I eat is ground beef. I think the last time I ate bacon was at Christmas - I don’t eat salami or hot dogs or more processed meats; I occasionally have high-meat content sausages, but we’re talking once every 3 months or so.

But here’s the thing: I don’t feel as good. I didn’t notice it at first; it’s kind of crept up on me. I also feel like my fat loss has stalled a little. I know this can be my body doing other things, so I am not too concerned - but I thought back and I felt like I could see a connection between the fat loss stall and moving away from steak.

I’ve been trying to find out why ground beef would have this effect - or whether I was imagining things! It seems that carnivores online are split - some find ground beef more tolerable than steak; others find steak more tolerable than ground beef.

Apparently it might be due to:

  • the cut of beef used in ground beef
  • ground beef needs to be cooked thoroughly (which I do) compared to steak which can be cooked rare (which I do)
  • higher cooking temperatures denature the protein
  • bioavailability of the rare steak is better than the well cooked ground beef
  • you can absorb more protein with the same quantity of ground beef than you do with rarer steak
  • histamine content is higher in ground beef

People talk online about the taste affecting their enjoyment, or not enjoying the rendered fat. Some suggest that this means they’re seeking for excuses to move back to the more expensive steak - but neither of these have been a problem for me. The fat has been beautifully golden as it’s poured off, tastes delicious whether solid or liquid, and is probably my favourite part of the meal. I also didn’t move from steak to ground beef due to cost - I did it because I felt I wasn’t getting enough fat.

If that part about the protein absorption is true, then maybe in my quest to get more fat, I’ve accidentally pushed my protein % higher - so the two have cancelled each other out.

Anyway, others suggest that this is a personal thing - just like how some prosper on higher fat / lower protein, and some prosper on lower fat / higher protein.

A few also suggest that ground beef is not as satisfying as a steak so you tend to eat more of it. Maybe it’s got something to do with how much you need to chew? Psychological, perhaps?

Anyway, I thought it was worth sharing in case anyone else was having similar issues. I’ll let you know how it plays out.

@Karen18
Thanks :two_hearts: I am on a rollercoaster for sure, you said it! Having things final will be a relief in the end just like you said. some closure and forward movement  appreciate your thoughts!!

@JJFiddle
happy to read your guts are coming more in line for ya!!!

@Septimius
wonderful post to read from you. Walking that ‘zc walk’ we all have to do at some point as we keep changing.

It is a fat/protein issue. In that your body is asking for some type of change, just like you said, how you play it out is just keep flipping around a bit to find that fat/protein ratio that now suits your current needs. It can be very difficult, I walked that same crazy path  it is kinda very unnerving and unsettling in a way cause like you said, you aren’t on your ‘zc high’ and we do feel that ‘less than’ greater good, I know just what you mean but you will hit back on it definitely! You might need more combo meals, as in your burger meat and then add bacon, like a high fat option in food next to it.

burger can be very weird. I was high fat burger and did fine on the fat til real fast I can not handle it. I am now 85/15 or 90/10 and I eat that and I am happy as a clam.

but just keep playing it out just as you said. Your body could also be doing that ‘bit of change’ we ‘can’t see’ inside and that means we can ‘feel off’ for a bit and then all of the sudden, boom you are back in good form.

So keep eating well. Just keep on the meats exactly like you are doing…ride it thru  that is all I did. Made me write posts just like the one you written now, but on my zc boards all the responses were-----just keep on plan tight, eat what you desire when ya want it, don’t overthink, just eat what you are drawn to eat and enjoy and you can’t go wrong on this lifestyle. Can’t wait to hear how you are riding it thru and how you are changing a bit.

-----------------simple day
got chicken breasts and leftover pork chops
also hit a good sale on bacon…oh yes, I bought a ton of it.
I might just throw in a 1/2 lb or so of bacon in my day

Arggghh took me ages to get to sleep last night, a good few hours before finally dropping off. I had looked at the workout for todays Open Games … I have to read it thoroughly … all the weights, and rules for the movements etc … it takes a while for it to all sink in. I did tell myself NO Pressure , I can only do what I can do lol but thats easier said than done. As soon as my eyes were closed I was visualising the workout and flipin Nora couldn’t stop counting in my head. That may be because I did too many burpees last week lol and didn’t want to be wasting time doing more reps than I needed to this week! It took a couple of herbal sleep tablets to eventually send me off to the land of nod.

A few wee trips in the night and awake before my alarm was due to sound off. Stair runs done, warmed up and then realised with all that pressure I was putting on myself last night I completely forgot to take my night time meds so it was no surprise to find my BP slightly raised this morning. Arggggh really annoyed at forgetting them… now they’re going to be out of sync and I will keep wondering why one of the packets is no longer ‘even’ as i have to pop out two every morning… one morning one night time! Hey ho I am sure there will be a time in the future when I forget once more and that will even them up again. No wonder my son is Autistic!

So went to CrossFit and did the last wod of the games. I was in heat one and the coach got us nicely limbered up ready. So glad to get my workout done and out of the way… it was tough but much better watching the next heats and cheering everyone else on… I felt their pain! I think I did respectable but won’t know placing till Tuesday or when someone kindly lets me know as I struggle with the website lol. We will see if I have slipped down the slippery slope :rofl:

Didn’t get home till just after midday so I was ready for my first meal. 3 scrambly eggs and finished off the bacon which tasted so salty. Not adding salt makes a big difference to how salty the bacon tastes when you only eat it once in a while!

Cooked a leg of lamb for later but I am thinking I may have to do a little taster as it has been resting on the worktop for a little while and smells delish!

Catch up again laters :slightly_smiling_face: x

Had to put this up… lamb is so melt in your mouth tender. Dont think there will be any leftovers tomorrow :wink:

I’m going to keep this in mind. I eat a lot of steak, but also roasts, brisket, pork loins, chicken thighs, etc. I only for hamburger when out and unable to eat elsewhere.

But I see hamburger as a staple for many here. And I like hamburger. I’m just in a happy zone right now. Like you, I am disappointed when I get a big ol’ hunk of beef and flip it over and there’s no fat!!! I feel like hanging out behind the meat department and snatching their cast off fat.

You bring up some interesting points. And I’m mentally filing them away.
(In theory. My filing system has developed a few leaks over the years. Lol)

(Karen) #170

When I googled what not to eat after my stroke I was expecting a long list of meat meat and more meat but was surprised to see that the main thing not to eat amongst a few other things were takeaways burgers! I guess home made burger is fine and I do still have a few shop bought burgers in the freezer. I am not a huge fan though and as someone mentioned earlier they are not as satiating. They fill at the time but don’t seem to fuel for long. I prefer steaks and always on the look out for reduced price ones of which I usually find plenty fortunately.

#171

I’m glad it’s useful - or, least, might be in the future!

It took me ages to realise that I just wasn’t as happy or content as I am normally - just felt a bit irritable, and I couldn’t work out what was wrong.

I have to admit, I didn’t even consider it until after I’d bought some steak and suddenly felt better - so many other people do it, it tasted good, I thought I’d solved the fat requirement etc.

I’m going to try to visit a more local butcher soon because it might be easier to talk out in person - but I think it’s also taught me a lot about steak sizes. The 8oz steak are too thin, I think - it can be hard to get a good sear and keep it rare.

I’ve had a few 16oz steak this week, and they’ve all cooked to perfection. So I’m going to try buying bigger for a while as well.

@Karen18 - weirdly enough, I’ve never really eaten takeaway burgers. I think I’ve had two or three McDonalds burgers in my entire life. Maybe that should’ve been a sign that minced beef wasn’t likely to be a staple for me. :joy:

@Fangs - I think you’re so right; it definitely keeps coming back to fat. The combo idea is interesting - I will bear that in mind when I use the mince up!

(Karen) #172

Never been my go to either @Septimius I always preferred the fillet o fish when I took the kids to Macky D’s … funny when I look back on that era and thought I was giving them a treat :astonished::astonished: But having said that on one occasion last September when travelling with my daughter and son we stopped at a service station burger King and I had a skinny burger and oh was that skinny!!! One floppy piece of tasteless crap which probably cost more than the one with a bun because it had to be made without and that maybe involved having to think too much!!! hahahahaha

(Karen) #173

Oh heck whats the point in keep slicing pieces off and covering the rest back up… just slap it on the plate as is and get stuck in lol. Didn’t take long to devour the whole leg and gnaw at the bone, what an absolute lady … errmmm NOT :rofl::rofl: totally delish

(Linda ) #174

Fat is def an issue for me it seems… I bought some pre cooked burger patties for a change to make my burger and i ended up snacking again grrr. . nope they don’t hold me it was a nice change but I think next time I’ll have bacon on the side…

What I did do last week was buy a brisket and today sliced it thin and grilled it and also cut some of the fat off to eat on its own…
So first meal today I had a small rib eye with beef brisket and beef brisket fat on the side …yep def feel full …

(Daisy) #175

Parmesan pork nuggets. That was the last of my Parmesan cheese, so this meal is sadly over. I’ve enjoyed the pork and chicken so much this way though the last week. Then for meal 2 I had bone broth jello, egg salad (3 eggs, primal kitchen brand Mayo, a little bougie mustard, and a handful of bacon pieces - absolutely hit the spot!), and 2 tiny little sirloin kabobs. It’s all that was left from what I had fixed my daughters and niece for dinner last night. All in all, an absolutely delicious carnivore variety eating day. Included several carnivore food groups :joy:: pork, eggs, and beef and satisfied some cravings. I truly love this way of eating. Then had some yogurt this evening.

:clown_face::clown_face::partying_face: Carnivore food groups…too funny.

-----------wonderful food pics on the board as usual. everyone eating so fine!

I ate my lb. of bacon. omg so good. I got off bacon mostly but yesterday I SO wanted it and thought, eh will eat 1/2 lb…fry up, eat, fry up more, eat and I went thru the whole lb. pack standing at the stove top HA The way I always do it

of course after that all that bacon satisfied me so fast. you never ‘get any tummy fullness’ but I get total satiation to the ultimate, so next food ended up being 2 burgers with cheese (85/15) and a bit later I hounded down a small piece of chicken breast.

I must eat my last leftover pork chop today before I lose it in the fridge…I ain’t doing that with meat costs high, I am gonna eat that chop first in my day.

got a nice steak defrosted for later…but I also got my mind on a big old can of tuna with mayo. Something I haven’t been eating much at all again but now want it. I want something, I eat it!

So far so great all! ZC ON!

(Daisy) #177

@Fangs :” Carnivore food groups…too funny”

Eat the rainbow, right?? :joy:

#178

Oh my, I think I’m (naturally) tending towards carnivore.
That sneaked right up on me.
Just seems right.
I’ll never give up mushrooms though…NEVER!
:grinning:

(Robin) #179

Snuck up on me too. And coffee is my version of your mushrooms.

#180

Coffee is alright…depends what one mixes with it?

(Robin) #181

Stevia and heavy cream. And my coffee is all decaf.
