Caramelized Onions (with Leftover Onion Butter)

This is the simplest way I’ve found to make caramelized onions. They usually take forever to cook properly, but here’s a way to make them in a slow cooker. You also get onion-flavored butter afterward, which is also a great addition to pretty much anything.

Ingredients:
3 lbs onions (I use sweet yellow, but regular yellow work great too)
1 stick butter (8 tablespoons)

Tools:
Slow Cooker
Colander or Strainer

Directions:

  1. Peel onions and cut in half, then slice thinly (for half circle slices).
  2. Put onions and butter in slow cooker.
  3. Cook on low for 12 hours.
  4. Stir once or twice during the 12 hours.
  5. Drain the onion/butter mixture in a colander over a bowl and save the leftover onion butter too!

i don’t recall where I learned this, but if you need caramelized onions in a hurry, add a big pinch of baking soda to the onions if simmering on the stovetop. Flavor does not develop quite to the level of a long simmer, but good enough to add to a recipe.
