Caprese Salad

Very simple and elegant salad, taking advantage of the abundance of ripe tomatoes and basil when in season. I found tomatoes and basil at the farmer’s market this morning…yay!

Slice fresh mozzarella cheese and a fresh ripe tomato. Place on a plate in whatever pattern you choose, with fresh basil leaves. Sprinkle with your favorite salt (I used fleur de sel), and drizzle with extra virgin olive oil.

Right on, Fiorella - one of the all-time-great food pairings. A little balsamic vinegar can go nicely with it, too, if one can take a couple grams of carbohydrates.

OK since this got bumped – I have to have it for dinner with my homegrown tomatoes and basil.

This is an amazing start to a meal. I make this all the time for my wife and I. I use balsamic glaze on hers (it’s sweeter, but she’s not keto), and on mine I’ll throw on a little balsamic vinegar.

LifeProTip: Basil is quite possibly the EASIEST herb to grow. I think you have to actively try to kill it for it to die. Just let it grow before starting to trim it. Plenty of youtube vids on how to trim herbs correctly.
