Capers... Ideas needed!

I didn’t realize until last night capers are extremely low calorie AND carbs.

1 tbsp has 2 calories and .1 Net carb. Even 100 grams of capers has only 23 calories and 1.7 Net carbs!

I baked a few pounds of chicken thigh with a little lemon juice and a bunch of capers. Plus some Pink himalayan salt. Came out great!

Anyone here get creative with capers!? I’m interested in some recipes and creative ways to use them.

here is a caper brown butter sauce for fish (or chicken)

melt a couple of tablespoons of butter and let it get foamy and start to brown ( you will smell a delightful hazlenut smell) before it turns too dark pour a good splash of cider vinegar into the butter to stop the browning … be very careful to use a big enough pot because at this point the butter will bubble and rise over the top if the pan is too small…

pour the brown butter into a smaller pan leaving the darkened sediment at the bottom of the first pan… discard this

into your brown butter add capers, fresh chopped parsley, a squeeze of lemon, diced red onions, and barberries ( you can replace the barberries with dried bluberries or cranberries)

delicious easy little sauce to pour over any fish or poultry
