Tried this recipe last night but it came out awful, all the ingredients seemed to separate and freeze independently, not sure I made the mix correctly as the instructions are a little vague.

Any tips or better ice cream recipes? I’m a bit discouraged because it’s a new machine and it’s the first recipe I’ve tried - somebody give me something guaranteed to succeed!

I would have probably combined everything in a blender for a few minutes.

Ah, yeah… Good point! Emulsify the mixture fully before freezing… makes sense. Might even want to slowly add the melted butter to the other ingredients… I’ll try that and report back! For science of course.

djfoodie.com. He has making ice cream down to a science. I have both his recipe books, and what a find they were. He gets into the science of baking without wheat and how to overcome the problems that creates. Just search his site and you will find out more about making ice cream than you ever wanted to know. He’s a great resource. BONUS: his books are a fun read, even if they are cookbooks.

Did you use an ice cream maker like the recipe did? Because that can make a huge difference.

Yes, but it was a new one and I was unfamiliar with it which probably played a part as well.

For those following along, I checked out djfoodie.com at the suggestion of @marauder and found some great info in this article (still reading it) which I think will help in my next quest for a palatable sugar free “ice cream”…
