Broccoli and Bacon Tots

So… go easy on me as this is my first attempt a posting a recipe. I have no idea what the net carb count is, but it should low. If not, I bet someone will set me straight.

I admit it, I re-engineered (stole and changed) this recipe from my ninja cookbook I just got with my new Nutri Duo, which I like, by the way.

Ingredients

  • 2 1/2 cups broccoli flowerets
  • ~ 2 tablespoons of finely chopped onion
  • 1 large egg
  • 3/4 cup shredded cheddar cheese
  • 6-7 strips of crispy cooked bacon broken in to “bit” sized pieces
  • Garlic salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees. Line a baking pan with parchment paper and apply non-stick spray.
  2. Boil the broccoli for 1-2 two minutes to blanch it. Remove and run under cold water to quick cool. Drain well.
  3. Put the broccoli and onion into a food processor and chop/mix/pulse a few times until the it is maybe a rice or large oat consistency - not a paste! It only took a few pulses in mine to get it that way, like less than 10 seconds.
  4. In a medium/large mixing bowl add the mixed broccoli and onion mixture. Add the remaining ingredients and mix them together well with a spoon or spatula.
  5. By hand, shape the mixture into tots about 3/4 wide by 1 1/2 inches long (or so) and place onto the baking sheet. NOTE: they can seem kinds of wet at this point - no worries this is normal in my experience.
  6. Bake for a total of 25 mins turning over half way. They will develop a crispy outside along the way.

Here is my poor attempt a being a food photographer! In the photo they look almost burnt, but that is my crappy skill.

Enjoy them with a dipping sauce of choice or plain. My kids even liked them. Enjoy!

Interesting :thinking::thinking::thinking: iv seen alot of post for “fritters” on the book. But I think I want to try these . When I do I’ll let u kno how they are!

Wonder how these would hold up to frying?

Looks good. You could probably do this with other veggies such as cauliflower or kale. I would squeeze the water out of the veggies using my hands after cooking them prior to whizzing in food processor.

Quick update -

I was unaware of this - but Trader Joe’s has riced broccoli now - easy peasy. I tried about 8 oz or so and did not blanch it. I cooked it a few minutes longer and think it turned out better. The trick is getting it most enough to stick but not most enough to fall apart.

My kids liked them better as well. :slight_smile:
