Breakfast coconut quark

Okay this one may be weird, but I have had this for breakfast 10-15 times now and it’s one of my go-to favs so far. You’ll need:

  • The fattest quark you can find in your store! In Germany Austria and Switzerland, we are blessed with the so called “Rahmquark” or “Sahnequark” (meaning cream quark literally) with up to 50% fat and only 8 grams of protein and 3 grams carbs per 100g. I use the whole 250g package for one serving.

  • Coconut oil. I tend to use 50+ grams for the 250 container of quark.

  • Coconut shavings/shivers. I usually opt for around 25 grams of those

You pretty much just mix everything together with a whisk. The consistency of very thick so get ready for some arm workout. Alternatively, put everything in a blender (I hate to clean the damn thing, that’s why I use the whisk). Before mixing or blending, I crush the coconut oil to small bits and pieces. The oil will harden due to the cold quark.

I love biting on those hardened coconut oil pieces together with the shivers, but it may not be for everyone. I am the kind of guy that can eat 150 grams of pure butter and drink olive oil straight out of the bottle, so keep that in mind.

For the 50% quark and my serving sizes of coconut ingredients, kcals amount to around 800-900.

Had to look quark up because I had never heard of that. Seems somewhat similar to cottage cheese but thicker.

To me, it’s more like Greek yoghurt on steroids (or the way Greek yoghurt should be :wink: ). Even more creamy and thick. Just delicious! I have completely curbed my Greek yoghurt and opted for my 50% fat quark. It’s a little more expensive, but well worth it!

When I was in Germany, we would make Quark with fruit all the time. I didn’t realize how much lovely fat it had! I’ll have to see if I can find any in South Florida.
