So here is another very inexpensive but delicious cut that will make tons of meat…great to make and then divide into little packages for your freezer or fridge. Also looks wonderful as a fancy roast in the middle of a dinner table.

First start with the roast in an oven-proof pan. Notice the skin…it will turn into beautiful crackling after the roasting process

Salt and pepper the bottom

This is not a necessary step, but I also added a bit of dried sage powder

And then I got out my sharpening steel and made sure my knife was very sharp…needed for the next step

I cut slits through the skin…the cuts were just enough to go through the tough skin and without cutting into the meat underneath

I continued the cutting on all sides of the skin. I then added salt and pepper

I placed the prepared shoulder in oven to roast at 425 deg F for 30 minutes. This was to start developing the nice crackling of the skin

Here’s what it looked like on the other side of the roast

The roast is then covered with aluminum foil, and placed back in the oven for 4 hours at 325 deg F
