I’m making my first batch from a turkey carcass. I have a regular crockpot/slow cooker on low. What is the benefit of 18-24 hrs vs say 12hrs? Just curious if it draws out more of the marrow or gelatin the longer it goes?
Bone Broth Cooking Times
I cooked mine (before freezing for future soup use) from lab bones. I cooked it for 36+ hours. I think the bird meats tend to do better with shorter cook times. The gelatin seems to take a lot longer on the darker red meats.
Made a batch of bone broth in my Instant Pot pressure cooker. 2 pkgs of chicken thighs, bone-in with skin. plus an onion, celery tops, bay leaves, 2 T ACVinegar, & water to the 8 cup mark. 1 hr on High then cool-down. Removed the meat etc,. then open-cooked the broth on Saute setting till reduced in half to concentrate the flavors. Great broth, and the meat was still tender and flavorful enough to make shredded chicken for meals (unlike the 12-24 hr stovetop method).
I made my first bone broth from frozen thanksgiving day turkey carcass. Best bone broth I’ve had yet and I’ve been buying organic premade stuff up until now. Making your own is the only way to go. Cooked mine for 24 hours in crockpot.
