This is my packed lunch for work:
50g frozen blueberries
1tbsp lemon juice
1-2 tbsp mct/coconut oil
Blend all ingredients together well.
If you make this in the morning, by lunch time some of the water will have separated off, either: mix the water back in, or drain the water off and eat like a mousse.
You can replace the blueberries and lemon juice with strawberries and vanilla essence, for a different flavour.
