Blackened skirt steak?

I love the beef fajitas at Jose’s Border Cafe (now that I’m able to withstand the temptation of warm chips and salsa!). According to the menu, it’s “Tender skirt steak marinated in a secret blend of spices, grilled over mesquite wood and served sizzling hot.” But to me, they’re just spicy-blackened and delicious. I don’t eat the soft taco shells, just pile my plate with the meat and grilled veggies.

There are a ton of recipes online, and the vast majority are keto-friendly, but was wondering if any of you good folks had a recipe you’d recommend.

I use Prudhomme’s blackening rub. Its really good

1 tablespoon sweet paprika
2 1⁄2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne
3⁄4 teaspoon white pepper
3⁄4 teaspoon black pepper
1⁄2 teaspoon dried thyme leaves
1⁄2 teaspoon dried oregano leaves

As far as the process, cover the steak in the rub and put it in a dry scorching hot cast iron. Do it outside if you can. If not get ready for a smoky house.

This a thousand times this. My first attempt at blackening decades ago taught me this.
