I made this recipe up last night and was amazed at how great it turned out.
I diced a onion and cooked it with a pound of grass fed ground beef (85%/15%fat). Next time I make this I’ll actually use sliced steak but it was just a quick week night dinner and I was making it up as I went so I used ground beef.
After a bit I added a big pile of sliced mushrooms, a splash of vermouth, a splash of red wine vinegar, thyme, marjoram, salt, pepper and ground bay leaf and cooked that all down for a few minutes. I added finely diced Serrano chilies because I like everything spicy - you may want to skip this.
While this was cooking I peeled 4 fairly large zucchini’s and tossed the peelings. Using my potato peeler I made wide noodles working my way around the zucchini until I started to see the seeds in the core and I tossed that.
Lastly I added about a cup of sour cream and when that was melted and I tasted and adjusted the seasonings I added the zucchini ribbons and tossing it all together gently cooked it just until the ribbons were halfway cooked (about 3 - 5 minutes). I swear it looked almost exactly like the picture below which is off the internet and has real pasta, and it was delicious!
