Baking experience with bamboo or potato fiber? Keto-cookies

Christmas season has started and I thought about backing some keto friendly cookies for christmas day. So I stumbled over bamboo and potato fiber as a substitute for flour.
Does anyone have experience with that? Especially how much should be used, just in combination with almond or hazletnut flour and what does it taste like?

Perhaps you have even some suggestions for recipes, I would be very pleased! :wink:

I have no experience with it but I have been using psyllium fiber. My keto muffins are more like bread, and they fill my tummy better.

Surely this will be similiar.
So how much do you use? As I understand it correctly, it’s just used to achieve a fluffy consistence but shouldnt be the main source of the dough to avoid any side effects? :wink:

Because I’m making a keto muffin.
1 tablespoon almond flour , 1 tablespoon husk. I don’t have any side effects because it’s only one muffin
