Bakewell Tart

I’m not sure if Bakewell Tart is a thing in the rest of the world, but it’s a staple dessert in the UK. I’ve made this a couple of times over the Christmas period for family gatherings and I think it’s even better than the regular flour and sugar version.

It’s worth making the Chia seed raspberry jam they mention in the recipe as well. I bake the base for twice as long as they suggest to get it nice and crispy, and add a bit more almond extract for more almondy punch. I used straight Erythritol for the sweetener.

A Cherry bakewell is among my favorite desserts and I had to face down a box of them in public yesterday. It was not so tough because I’d spent an hour haranguing people about Keto so I couldn’t exactly break down in front of them… would have been much worse on my own!

This is what came out of my uncle’s ‘cabinet of shame’

The only Keto things were the xylitol florentines in the tub and the tray of coconut flour ‘cookies’ I brought which came out as a nice dense sponge cake… made a raspberry shortcake with cream and berries and was happy.
