Aromatic Duck Lettuce Boats

I made delicious Aromatic Duck Boats with Hoi Sin Sauce.
For one person:

Duck
2 duck breasts
Chinese five spice

Sauce
4tbsp soy sauce
2tbsp peanut butter
1tbsp sweetener
2tsp rice wine vinegar (I used white wine vinegar)
1 garlic clove, finely minced
2tsp sesame oil
1/8 top black pepper

To serve
4 lettuce leaves
Half cucumber, cut in batons
4 spring onions, quartered lengthwise.

Cover skin side of duck in Five Spice and sear duck in pan, skin side down until getting crisp. Turn and seal other side. Move to oven preheated to 200 Celcius and cook for 16 minutes ( more if you want it brown all the way through).

Put all sauce ingredients into a blender and blitz together.

Put lettuce leaves on to plate and fill with cucumber, spring onions, cooked duck and sauce. Enjoy

that looks delicious. I love peking duck and this combines the sang choi bao course with the pancake course. Nicely done.

… and it was mighty delicious!! Added a little chinese 5 spice to the sauce and the juices from the duck (roasted a whole one). Even my 2yr and 4yr olds gobbled it up. Will make again. Thanks for the recipe.
