1 lb ground beef
2lbs ground pork
1 egg
1/2 cup BBQ sauce
2 to 3 tbsp of BBQ rub
1 chopped sauteed caramelized onion (optional)
1/2 lb of bacon chopped and fried into bacon bits
3 large diced jalapenos (no ribs or seeds unless you want it hot)
8 oz of pepper jack cheese (shredded, I grate my own)
Form into log, drape with bacon, offset smoke on charcoal grill at 375-400 for nearly 2 hrs until about 165 internal temp.

Yeah. I don’t like using a loaf pan, especially with bacon, it would be swimming in grease. I’d line a baking sheet with aluminum foil (easy cleanup) and put a wire baking/cooling ranck on it. That will keep the meatloaf elevated so it’s not sitting in grease. I have done this before and it works. 375 or 400 degrees, you might have to play with the temp to get the bacon cooked to the crispiness you want. I don’t use thick cut bacon with these either, they won’t really render. I also recommend using a remote oven/meat thermometer, you don’t want to overcook these or all the cheese will melt out.
I actually just wrote a receipe for a chicken, bacon, and ranch meatloaf. I’ll post that one after I try it. Might do it this weekend.

Would you share your BBQ sauce and rub?
Honestly, there are a lot of good store bought rubs and sauces that don’t have many carbs. I use different ones all the time. I think i used a Weber rub in it and not entirely sure on the sauce. I’m not too worried about the carb content in the sauce because you’re only using a 1/2 cup in nearly 4lbs of meat. I say use what you like, try it, refine it, tailor it to your pallet. A Texas hot BBQ sauce would probably go well with the jalapeno pepper jack meatloaf now that I think about it…
I use Hughes bbq sauce found at Walmart. It’s a lot less carbs. And I use a rub from my local Aldis that is bbq flavored and has no added sugars or maltodextrin or any of that crap!
Just finished mine in the oven, about 400f for 1hr 30mins. Bacon came out crispy how I like it! Haven’t tried it yet cause it’s cooling and probably won’t have any til later, but it smells amazing.

The Hughes BBQ sauce tastes too sweet to me, but better than regular sauces as far as carbs. I found some No Sugar ketchup and plan to experiment in making my own to suit my tastes.
I live in rural Arkansas where everyone here is diabetic, obese and you have to dodge the electric carts at Walmart to get through the store.
The regular BBQ sauces at the local restaurants are cloyingly sweet - even before keto.
