Anyone got any cool keto cauliflower rice ideas?!

hello!

i was dabbling with cauli rice a few months ago, and really liked it, but a couple of Supermarkets dropped the products and stopped stocking it frozen, so I forgot about it.

I’ve found a new place that does it, and 250g only costs about 4G in carbs, and it’s a proper high fibre/filling veg, that fills me up.

Has anyone got any cool ideas what to do with it? I think its possible to fry it up, as well as serve it steamed/microwaved - but other than serving it as though it were normal brown/white rice, I dont have any ideas how to use it!

I made a creamy bourbon, bacon, “risotto” with it just this weekend. It’s also good with some coconut cream and a little lime if you want something to go with Indian or Thai food.

I’ve found the key is cooking HOT and letting it brown a little to drive the moisture out.

Cook it then mix in some chopped herbs & spices (whatever floats your boat) as a rainbow couscous, I’m sure I’ve seen somewhere on here a Chinese special fried “rice”. Not sure if it would work with pre-riced cauli, but it’s lovely mashed with butter & cheese. Have fun & experiment :wink:

yeah this is it @MiKetoAF - my dad made a chilli con carne with the frozen cauli rice fried up in a wok - and I was convinced it was going to be gloopy and ruined - it was amazing!

Going to try a chicken fried cauli rice tonight with a really small amount of peas, eggs, some sesame oil, garlic powder, mushrooms and plenty of coconut oil, it’s just the creamy recipes I’d like to play with!

We’ve made “fried rice” a few times with it under a stir fry. It’s great.

If you search “Cauli” in the food section I’m sure you come up with tons of ideas. Probably a bunch of mine :joy: Love cauli rice. I’ve even had sushi made with it.

Yeah it’s a pretty decent bang for buck when you consider the carnage that actual grain rice causes and when in general comparison with calories, carbs and nutrition.

Microwaved Spanish Rice

  • About a cup of frozen cauliflower rice
  • About a half cup of finely diced veggies – onions, celery, red radishes, red bell peppers, …
  • Top with butter and spices (smoked paprika, hot curry powder, garlic powder, …)
  • Microwave for about 4 minutes
  • Mix in some Pace Medium chunky salsa
  • Add (Leftover) Meat/Cheese (optional)
  • Microwave for another minute or so
  • Top with Sour Cream (optional)

Classic Chinese fried rice is diced onion, diced celery, any leftover meat (chop bite size like bacon, roast, pork chop), any leftover veggies (chop) or cabbage or Napa or bok choy, scrambled egg (1 for each person), soy sauce and Green onions.

You can easily make cauliflower mash or a Mac & cheese version.
Just add lots of butter, cream cheese and cheese.

How do you get the sushi rice to stick together?

I make it similar to rice…

So… i cook it and then make a little mixture of rice vinegar and sweetner(to mimic the taste) and add that into my riced cooked cauliflour and then add some softened full fat cream cheese which helps it become cohesive and sticky
Then i spread it on my seaweed…add my toppings and stick it in the freezer to chill a few minutes before cutting

Stuffed peppers… the mix in the pepper is riced cauliflower, tomato sauce, ground meat, garlic and whatever herbs you like, topped with cheese. The carbs run about 16g per pepper so it’s not something to go crazy on or you can add some EVOO instead of tomato sauce and get it down to 10g per pepper.

My family loves this recipe. It’s a cauliflower version of cheesy potato casserole. I make it with frozen riced cauliflower. 100g microwaved, then mix in 20g of grated parmesan. Very simple, very quick and bloody gorgeous!
