I normally cook steaks via sous vide. However, I tried this recipe (substituted ghee for peanut oil on the steak, though), and think it’s my go to for steak now:
I used two skillets (one cast iron, one seasoned steel), both heated around 600 according to my infrared thermometer (yes, I have one of those), and I cooked two steaks per pan.
