This is a traditional tapas meatball with a little twist. Absolutely delicious.[wpurp-searchable-recipe]Albóndigas en Salsa: Carl's Keto Tapas Meatballs - - meatball mix ((beef, veal, and pork)), crushed pork rinds, garlic (crushed), egg ((large)), olive oil (extra virgin), kosher salt, crushed black pepper, Sauce: olive oil (extra virgin), onion (small, finely chopped), dried Ancho chiles (finely chopped), cumin, tomato sauce (Rao's marinara recommended), fresh tarragon leaves (finely chopped), dry red wine (Rioja), Preheat oven to 300F. Chop onion and dried Ancho chiles into small pieces.; Combine meatball ingredients and mix thoroughly.
; Shape into nine large balls.; Chop onion and peppers into very small bits. Fry in olive oil over medium heat until onions are translucent and peppers are soft. Add cumin and chopped tarragon. Stir to combine for a minute or two.; Add wine, allow to burn off while stirring for another two minutes. Add tomato sauce and thoroughly combine. Salt and pepper to taste.; In an earthenware pot, put half the sauce in the bottom, layer in meatballs, cover with remaining sauce. Cover and bake for 30 minutes. Open pot and rotate meatballs. Cook for another 10 minutes.
