Be careful with water content. I usually put the rice in a clean kitchen towel and squeeze as much water out before any further food prep. Gives me more control of what final dish comes out looking and tasting like.
And mushrooms, cream and parmigiano reggiano can be your best friend when creating the risotto dish. If you have it handy…a few drops of truffle oil works great, too!
