Just be clear on when the percentages are calculated on total weight, and when they are calculated on total calories. It makes a difference!

I’m interested in 40%+ fat by weight I’ve never seen the fat expressed in percentage of total calories on products, but that may be the case in some countries.

I think in the U.S., when they label milk 2%, etc., they are going by weight, but I have seen other percentages on nutrition labels calculated on the basis of calories. Just make sure they are calculating the way you want them to, so you get what you want, lol!
