So, I participated in a 3 week Fast with my church and I did Water only for those 21-days. I lost 25 lbs by the end on 2/4/19.
My husband wanted to go KETO after the Fast, so I did a lot of research, reading, and planning during my Fast. I was amazed at all of the wonderful recipes now available for low carb compared to when we did Atkins in 2003/2004. Things I never thought I would eat started looking good to me.
My biggest error after the Fast was not watching the scale as I started KETO. I knew I would gain some weight back because that’s just what happens after a Fast like that. But I didn’t check my weight until the end of the first week. I was so mad at myself. I gained 8lbs back. I think if I had been more aware, I would have done my first KETO week differently.
So, my first goal was not to regain any more weight then focus on losing weight on KETO.
I maintained the weight for the next week. I just wanted to not gain weight. And yes, I weighed myself every day. I started logging some things too (not foods necessarily).
The 3rd week on KETO, I finally decided to look into macros because I felt that counting my carbs wasn’t doing enough. Oh, my gosh, I was disappointed at the macros calculated for me. Thankfully, fat was satiating me. However, finding the balance between carbs, fat, protein, and calories was/is frustrating! I was overshooting my fat macro every day and salads were doing me in. Whut?
I finally found a breakfast shake recipe that keeps me full nearly all day. I eat dinner because I know I need to not because I’m starving.
From week 2 to 3, I’ve lost almost 2 lbs. That’s even after I had to eat out twice because we were being tourists while my in-laws were visiting. I even had my first Diet Dr Pepper in this last week. (I was just so sick of water after nearly 6 weeks of nothing else, I allowed myself 1 DDP while at the KSC.)
The other things I did this past week was I made KETO pizza and cupcakes, so my husband and I wouldn’t feel deprived while my in-laws celebrated daughter’s birthday with pizza and red velvet cake. It did the trick. In fact, the kids wanted to know if/when they could have one of our cupcakes.
One really annoying food issue I’m having is I can’t find zucchini anywhere! I think I accidentally made cucumber noodles. Whatever I made was good, but I can’t find any zucchini and I love zucchini. My grandma used to make me zucchini and walnut cookies. Yum!
