I love bone marrow. One year my Mother’s Day gift was a few pounds of marrow bones. Heaven!
I must tell you…as a kid growing up in a Middle Eastern household, bone marrow was a staple. When we were kids, we called it “Mookhh” (I have no idea how to spell that phonetically as an English word.) Anyway, as kids, we fought over it. Now, as an adult, when I go to a high end restaurant and they’re charging $18 for “roasted bone marrow,” I want to punch the chef right in the nose. That, my friend, is mookhh, stop trying to fancy up “the food of the people.”
I totally agree. There are so many yummy cheap cuts that have been popularised and are now expensive. You used to be able to pretty well get lamb shanks for free - nobody wanted them. Now… makes me so mad. You rich people stick with your fillets and TBones and leave the cheap cuts to the paupers thank you very much.
I love bone marrow, it is one of my favourite foods lamb is my favourite and I eat it raw. I went to the butcher the other month and bought myself 2 whole beef bones, they cut them length ways, I was going to cook them but I ended up eating both lots raw and it was so delicious.

So on Saturday I was volunteering for a program but got done early and a few weeks ago I noticed a REAL butcher at the end of the same road. I decided to explore. It’s not just any butcher, but one that sources all the meat from pastured, grass fed local ranches, nice but very EXPENSIVE stuff. Still I wanted to buy something (and $44 per pound Wagyu was a bit out of my budget) so I asked about marrow bones. Still pricey at $7.49 a pound but grass fed and finished. I asked for one long bone split lengthwise. OMG–This bone is about 18: long and bigger around than my wrist! Full of marrow. It looks like true caveman fare and my family had a laugh at my acquisition. I can’t wait to cook that bone up.
The only thing I’m regretting is the fact that I didn’t also have the cut it width-wise so I could throw it in my broth pot after harvesting the marrow. I don’t think I have a pot big enough to cook it. :o(
Mmmm! Just ordered a front 1/4 cow (rib eye frenzy). I said keep as much fat as possible and give me all the bones cut for marrow access. Thanks for the tip. I need a fancy spoon now.
I’m on my third day of an open ended fast and needed to shop for a client as part of my job today. I tend to crave marrow on a fast. Almost obsessively. It’s not uncommon for my break fast meal to include marrow. I perused the meat department today and fixated on a package of marrow bones. With @becsta’s beautiful bones in mind, I asked the butcher to please cut them lengthwise for me.
Now to wait in agony till Sunday. I’ll try not to look at them, but I can tell you THIS:
