The other day I bought 400g of fine sliced prosciutto and we’d almost reached the heel of the ham so I asked the guy at the Deli counter - “hmmm what do you do with that?”
He said “Oh there’s no meat left I’ll chuck it”.
I said “I’ll buy it from you, and render it”
He said “Do you want this bit too”, and pulled a piece from the display that the next new ham was sitting on to be displayed.
And that was how I got two pieces of perfect ham fat for making krispy keto croutons from - for free. Dice into 1cm cubes and fry, and toss the crispy cubes over a soup.
