So first off, remember I was asking about fluffy keto bread ? Well we tried it today. Here’s that link again…


And it worked pretty darn well. I mean it looked like bread, smelled like bread, and tasted like bread. In fact, it tasted really good. Now to be really honest, it was a bit tough… and a little spongy. We might have over cooked it just slightly… But still, we want to play with the recipe a little, to see how we can make it more tender.
That said, it actually worked really well for my Tri Tip sandwich, as it held together better than store bought bread would have, even with a fat coating of mayo on both sides. Too tricky to try dipping it in the sauce though… So I had carefully hold it with one hand, then spoon the sauce over with the other :grin:

And BTW, the Tri Tip was SV’d at 136F for 20hrs, after an overnight marinade in Soy Sauce, and seasoned only with granulated garlic, and black pepper, then torched for about 2 minutes. It was fall apart tender, and SO freaking flavorful ! Worked great in a sandwich, as it didn’t try to pull the sandwich all apart (my teeth cut through it on the first pass :wink:)

That bread and the meat both look very nice, Chris. It really looks like real bread, that is pretty cool.

I know, right ? :slightly_smiling_face: My GF was pretty stoked, as she has always loved to bake. Of course now she wants to play with this some more… But she is also thinking about keto cupcakes, donuts, etc. Which is great for me :slightly_smiling_face: She can do all the baking, and I will be glad to SV all the meat :slightly_smiling_face:
